  1. Preheat oven to 375 degrees.
  2. Combine flour, bran, baking powder, baking soda, salt, and cinnamon in a large bowl. Stir in brown sugar. Add apples - and mix together.
  3. Make a well in the center and add apple sauce, milk, egg whites, and vanilla Stir until just moistened.
  4. Line muffin pan with paper cups.
  5. Fill cups 3/4 full.
  6. Bake for 20 to 23 minutes or until done.
