Nutria Sausage Jambalaya

Serves: 6-8
Ingredients
- 2 lbs nutria, diced
- 1 lb smoked sausage
- 1⁄4 cup oil
- 2 onions, peeled and chopped
- 3 garlic cloves, minced
- 2 cups rice
- 1 tablespoon Worcestershire sauce (Lea & Perrin's preferred)
- 1 (10 ounce) can Rotel Tomatoes
- 3 cups water
- salt & pepper (to taste)
Directions
- Heat oil in large dutch oven or stock pot.
- Brown nutria meat and sausage.
- Remove from pot.
- Add all other ingredients except rice.
- Simmer for 20 minutes.
- Return meat to pot.
- Cook 2-3 hours or until meat is tender.
- Add rice and bring to boil.
- Stir and cover.
- Cook over low heat for 35-40 minutes.
