Nuoc Cham (Vietnamese Dipping Sauce)

Ingredients
- 1 garlic clove, minced
- 2 tablespoons sugar
- 1⁄2 teaspoon crushed red pepper flakes
- 1⁄4 cup hot tap water
- 3 tablespoons fresh lime juice
- 2 tablespoons asian fish sauce
Directions
- Mash the garlic, surgar and red pepper flackes into a grainy paste on a small plate with the back of a fork.
- Scape the paste into a small heat-prooof serving bowl.
- Pour hot water over the mixture to dissolve the sugar.
- Let it cool slightly, then stir in the lime juice and fish sauce.
