Nourishing Traditions Waffles (Grain Soaking Method)

Ingredients
- 2 1⁄2 cups freshly ground whole wheat flour
- 2 cups buttermilk
- 2 egg yolks
- 2 -4 tablespoons pure maple syrup
- 2 tablespoons melted butter
- 1 teaspoon sea salt
- 4 egg whites
- 1 pinch sea salt
Directions
- Soak flour in buttermilk in a warm place for 12-24 hours.
- Stir in egg yolks, syrup, butter, and salt.
- In a clean bowl, beat egg whites with a pinch of salt until stiff.
- Fold into batter.
- Cook in a hot, well-coted waffle iron.
- Serve with melted butter and maple syrup.
