Northern China Steamed Egg Custard

Ingredients
- 1 tablespoon oil
- 1⁄2 cup ground beef or 1⁄2 cup pork, tightly packed
- 3 tablespoons chopped scallions
- 2 teaspoons soy sauce
- 4 eggs, beaten
- 1 1⁄2 cups clear broth
Directions
- Heat the oil in a small skillet. Add the meat, scallions and soy sauce and stir-fry for 2 minutes.
- Whisk the eggs and broth together.
- Place the meat mixture into a microwave safe bowl. Pour the egg/broth over the meat mixture.
- Cover and microwave on high for 5 minutes. If not firm, microwave for additional 30 seconds.
