No Fat Vanilla Ice Cream

Serves: 8-12

Yields: 8 1/2 cup servings

Directions

  1. Mix gelatin with boiling water and stir until it dissolves.
  2. Dissolve sugar in skim milk over a medium heat without letting the mixture boil.
  3. Remove from the heat and add the gelatin mixture.
  4. Stir in vanilla.
  5. Pour into a shallow container and freeze until the mixture has set but not frozen solid. (or use your ice cream machine).
  6. Mix with an electric beater until the mixture is white and fluffy. It should be at least double it's original volume.
  7. Freeze until solid.
