No-cook Plantation Strawberry-Pineapple Jam

Freezer jams are a great way to put up in a hurry.

Yields: 5 cups

Ingredients

  • 1 34 cups  crushed strawberries
  • 12 cup  well drained,  canned crushed pineapple
  • 4 12 cups sugar
  • 14 cup lemon juice
  • 1  packet  Certo
  • 14 cup dark rum (optional)

Directions

  1. Place strawberries and pineapple in a large bowl.
  2. Add sugar to fruit and mix well.
  3. Let stand 10 minutes.
  4. Stir in pectin and lemon juice.
  5. Continue to stir until sugar is mostly dissolved.
  6. Pour into clean jars or containers like rubbermaid or ziploc.
  7. Leave 1 1/2 inches head space for expansion.
  8. Let stand at room temp up to 24 hours to get a"set".
  9. Store in freezer up to 1 year, keep in the fridge for up to 3 weeks.
