No Cheese No Nuts Tomato Pesto

Serves: 4-6
Ingredients
- 2 garlic cloves
- 6 tablespoons olive oil, preferably extra virgin
- 1⁄3 cup sun-dried tomato packed in oil
- 1⁄3 cup packed fresh basil leaf
- 1 teaspoon balsamic vinegar
Directions
- In a food processor blend ingredients with salt and pepper to taste.
- Process until smooth.
- Transfer to ice cube trays. Freeze for up to 3 months.
