No-Bake Chocolate Peanut Butter Balls

I devised this as an alternative to expensive, over-packaged granola bars. It is quick to make and I can make one serving at a time so I am not tempted to eat too many leftovers! Show more

  1. Place peanut butter and chocolate chips in small microwave-able bowl. Microwave on medium 30-60 seconds until peanut butter is melted and chocolate chips are growing soft. Stir until well-blended. Add in oats and cereal. If mixture is too wet, you may need to add more cereal. Stir until well-blended and form into meatball-size balls with damp hands. Refrigerate until firm. I make these the night before and store in the fridge, then pack in my lunch the next morning. These are a great high-protein alternative to granola bars!
