No Added Sugar Apple Pie

We have diabetics in our family and this pie is always a hit- no one even realizes that it's lower in sugar. It's as good if not better than full sugar apple pies. Show more

Ingredients

  • 3  tablespoons cornstarch
  • 1  tablespoon ground cinnamon
  • 12  ounces  unsweetened apple juice concentrate
  • 6  cups  peeled and thinly sliced apples
  • 1  pie shell, for 9 inch double crust pie

Directions

  1. Preheat oven to 350 degrees.
  2. Whisk together cornstarch, cinnamon, and 1/4 of the apple juice concentrate.
  3. In a saucepan over medium heat, simmer the apples in the remaining apple juice until tender. Add the cornstarch mixture and stir until thickened.
  4. Pour into bottom crust and top with top crust. Bake for 45 minutes.
