Nif's Roasted Grape Tomatoes (Try Them on the Barbecue!)

One of my favourite snacks is fresh grape tomatoes. Here is another great way to enjoy them. Top grilled chicken with them, try them on top of a salad or sliced flank steak or as a side dish. You can always place the tomatoes in a foil dish in the BBQ with indirect heat, until done. Whatever you decide to try, I'm looking forward to hearing what you come up with. Enjoy! Show more

  1. Preheat oven to 400°F.
  2. Mix tomatoes, garlic,and olive oil in a bowl. Sprinkle with salt and pepper, to taste.
  3. Place tomatoes in a baking dish large enough for the tomatoes to be in 1 layer. Do not overcrowd! Roast for 20 minutes, and then stir. Add water if the tomatoes are too dry. Bake for 20 to 30 more minutes.
  4. You will know that the tomatoes are done when they have just begun to shrivel and the liquid in the dish is a bit thicker. The skins should have split a bit too. Serve immediately.
