Nif's Pork & Cranberry Meatballs

Yields: 30 meatballs

Ingredients

  • 2  teaspoons garlic, minced
  • 1  teaspoon rosemary, dried
  • 2  teaspoons olive oil
  • 1  teaspoon sea salt
  • 1  teaspoon pepper, freshly ground
  • 1  tablespoon  whole grain mustard
  • 2  lbs  lean pork, ground
  • 12 cup  breadcrumbs
  • 3  egg whites
  • 23 cup dried cranberries, roughly chopped

Directions

  1. Stir together garlic, rosemary, olive oil, salt and pepper. If you can make it into a paste (with a mortar and pestle or mash together with the back of a spoon), that's even better.
  2. In a large bowl, combine everything with your hands. Work ingredients until the are completely mixed. Make into approximately 30 meatballs.
  3. You can cook these in a nonstick pan or in the oven at 350F until cooked through, internal temperature being 160°F . The time depends on how big you make your meatballs.
