Newmans Own Orzo Crazins Salad

Ingredients
- 1 tablespoon vegetable oil
- 1 cup chopped red pepper
- 2⁄3 cup chopped green pepper
- 1 cup chopped onion
- 4 cups cooked orzo pasta
- 1⁄4 cup shredded carrot
- 1 1⁄2 cups dried cranberries
- 1⁄3 cup olive oil and vinegar dressing
- salt, to taste
- pepper, to taste
Directions
- Heat oil in skillet over medium heat. Add peppers and onions and saute for 2-3 minutes until onions are pale golden color. Add to a large bowl with orzo, carrots and dried cranberries. Drizzle in the olive oil and vinegar dressing. Add salt and pepper to taste. Refrigerate for a few hours before serving.
