New England Clam Chowder

The classic & yummy chowder.

Serves: 4

Ingredients

  • 2 -3  slices bacon, diced
  • 1  medium onion, chopped
  • 3  medium potatoes, peeled & chopped
  • 2 (7 1/2ounce) cans minced clams, drained (save liquid & add water to make 2 cups)
  • 14 cup butter, melted
  • 14 cup flour
  • 2  cups milk
  • 34 teaspoon salt
  • 14 teaspoon pepper

Directions

  1. Cook bacon & drain.
  2. Saute onion until clear.
  3. Add potatoes & clam juice.
  4. Cook until potatoes are tender.
  5. Melt butter & mix in flour.
  6. Stir into potato mixture to thicken.
  7. Add milk, clams, salt, & pepper.
  8. Heat through well & serve hot.
