New Crush Potatoes

Ingredients
- 2 1⁄2 lbs small waxy potatoes
- 1 teaspoon salt
- 1⁄3 cup chopped of fresh mint
- 1⁄4 cup chopped fresh chives
- 1⁄4 butter
- salt and pepper
Directions
- Place potatoes in saucepan. Add boiling water and bring to a boil over high heat.
- Reduce heat to medium, cover and cook until potatoes are tender all the way through, 15-20 minutes.
- Drain potatoes. Wipe pot clean and return potatoes to saucepan over low heat.
- Crush potatoes with a fork against the sides of the pan. Mash in mint, chives and butter until potatoes are crushed into uniform pieces.
- Season to taste with salt and pepper.
