Neptuno Salad, Caracas Style

This is a version of a salad that is served in a Restaurant in Caracas, where I live. It's adapted to what you can do at home. The most difficult part is caramelizing some pineapple, but that's not really difficult but a bit time consuming. On the other hand you can eat the caramelized pineapple alone or mix it with some yogurt for a treat, so it's totally worth it. The prawn Crackers can be found in stores that specialize in Asian food. They are fun and very easy to deep-fry. Show more

Serves: 15-20

Yields: 15-20 filled crackers

Ingredients

  • 2  cups  imitation crabmeat
  • 1  cup  wakame seaweed salad
  • 1  green apple, peeled and diced
  • 1  kiwi, peeled and diced
  • 1  mango, not ripe, diced
  • 14 cup mayonnaise
  • 12 cup pineapple, caramelized
  •  soy sauce
  •  pepper
  •  shrimp crackers, as edible trays for salad

Directions

  1. Caramelize the Pineapple on a pan with some brown sugar on very low fire.
  2. Heat the oil for the prawn crackers. Deep fry until they surface. If the oil gets too hot the crackers will look a bit golden. Take the oil cool a bit before continuing.
  3. Prepare the fruit and break up the imitation crab so it looks a bit like spaghetti.
  4. Mix the imitation crab, fruit, wakame salad, caramelized pineapple (include some of the caramel liquid) and mayo. Season with soy sauce and pepper to taste. Put the mixture on the prawn crackers. Enjoy!
