  1. Combine sugar, olive oil, yeast, and 2 cups cold water in bowl of a stand mixer fitted with a dough hook.
  2. Let sit until foamy, about 8-10 minutes.
  3. Mix flour and salt in a bowl.
  4. With motor running, slowly add flour mixture.
  5. Mix until a smooth dough forms, about 8-10 minutes.
  6. Transfer dough to a greased baking sheet.
  7. Cover with plastic wrap.
  8. Let sit at room temperature 1 hour.
  9. Divide dough into 4 balls.
  10. Transfer to a greased 9 inch by 13 inch dish.
  11. Brush tops with olive oil.
  12. Cover with plastic wrap.
  13. Refrigerate for 48 hours. Makes four 12 oz balls.
