Ingredients
- 4 large russet potatoes
- 3 tablespoons butter
- 1⁄4 cup cheddar cheese, grated
- 3 tablespoons green onions, chopped
- 4 large eggs
Directions
- Bake potatoes and scoop out insides.
- Mix potato with butter, cheese, and green onion.
- Restuff potato skins with mixture.
- Make a well in center of each stuffed potato skin; crack egg into well.
- Bake at 350°F for 15 minutes or until egg is set.
