Nadia's Indian Restaurant Salad

Ingredients
Salad
- 1 large carrot, sliced
- 1⁄2 apple, cubed
- 1⁄2 pear, cubed
- 1⁄2 red bell pepper, diced
- 1⁄2 stalk celery, sliced
- 1⁄4 English cucumber, cubed
- 1⁄4 red onion, sliced
- 1⁄4 cup mango, cubed
- 1⁄4 cup cantaloupe, cubed
- 1⁄4 cup grapes, sliced
Dressing
- 1⁄2 cup sugar
- 3⁄4 cup vinegar
- 1⁄3 cup salad oil
- 1 -1 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
Directions
- Combine oil, vinegar and sugar in a microwavable bowl and heat at 50% power until the sugar has dissolved. Whisk in the salt and pepper.
- Pour the dressing over the prepared fruit and vegetables. Cover and marinate in refrigerator for at least 4 hours.
- Mix well just prior to serving. Remove salad with slotted spoon and serve drizzled with marinade.
