Nacho Ordinary Pizza

Serves: 1-2

Yields: 18 pepperoni chips

Ingredients

  • 18  large  pepperoni slices
  • 14 cup  ultra-  low-carb marinara sauce (Transforming Recipes Cookbook, page 169 or any low carb sauce)
  • 14 cup cheddar cheese (shredded)
  • 2  tablespoons  jalapenos (diced)
  • 2  tablespoons black olives (sliced)

Directions

  1. Set oven to broil.
  2. Line baking sheet with aluminum foil.
  3. Place two paper towels on a microwave-safe plate.
  4. Arrange pepperoni sliced in a single layer on plate. Cover with another paper towel.
  5. Microwave on high for 1 minute. Remove from microwave. Push down on chips, soaking up excess grease.
  6. When pepperoni slices are crisp, arrange in a single layer on baking sheet.
  7. Spoon a small dollop of Marinara sauce on top of pepperoni slices.
  8. Sprinkle cheese on top of sauce.
  9. Place under broiler for 1-2 minutes or until cheese begins to melt.
  10. Remove from oven.
  11. Evenly distribute diced jalapeno on top of cheese.
  12. Place one black olive on top of jalapenos.
