Directions

  1. In a small saucepan, bring 6 tablespoons of brown sugar, butter and water to a boil. Stir in liquor; simmer to blend flavors, about 1 minute. Remove from heat and set aside. Place one flour tortilla on work surface. Slice the bananas into coin shaped pieces. Divide the bananas evenly and place in the center of eat tortilla. You may find that the tortillas are easier to work with if you warm them very lighly on a gas stove. Sprinkle the bananas with brown sugar, cinnamon and nuts. Fold to form a burrito and fasten with a toothpick. Repeat until all burittos are filled. Heat oil in a large frying pan over medium heat. When oil is ready, about 5 min, then put burittos in the pan. Put only three at a time if using the small tortillas. Fry, turing once, until golden brown, about 2 minutes on each side. Transfer to a paper towel and blot the oil. Remove the toothpicks and slice in half diagonaly. To serve dish a large scoop of vanilla ice cream on a bowl or salad plate. Put the two buritto halves on each side of the ice cream. It looks nice to stand the side up a little. Spoon desired amount of sauce over the top. Sprinkle with cinnamon and powdered sugar if desired.
