My Vegetable-Beef Soup

I started making vegetable beef soup in 1970. An older lady who was our neighbor at the apartments where we lived gave me a few hints. She said she always added a splash of hot sauce and just a small amount of butter. I still do that. She used stew meat for her soup, but I could not afford that so I used hamburger meat, still do. You can use either tomato juice or V-8, I like both. Also, you can omit the pkg of dry onion soup mix, but I like the flavor. Only use one of the individual packages of soup mix. Show more

Ingredients

  • 2  lbs hamburger meat
  • 1  medium  chopped onion
  • 1 (28 ounce) bottle  , v-8 or 1 (28 ounce) bottle tomato juice
  • 3 (15 ounce) cans  Veg-All, drained
  • 1 (1 ounce) package  Lipton Onion Soup Mix
  • 1  tablespoon Worcestershire sauce
  •  salt & pepper
  • 1  tablespoon  hot sauce
  • 1  tablespoon margarine or 1  tablespoon butter

Directions

  1. Brown hamburger meat with the onions, drain fat.
  2. Add tomato juice, then drained canned vegetables.
  3. Add the rest of the ingredients and simmer for about 2 hours.
