My Shrimp De Jonghe

Ingredients
- 1⁄4 cup peanut oil
- 1⁄2 cup flaked unsweetened coconut
- 1⁄4 cup breadcrumbs
- 3 tablespoons parsley (minced)
- 1 tablespoon garlic (minced)
- 3⁄4 teaspoon salt
- 1⁄4 teaspoon paprika
- 1⁄4 teaspoon cayenne
- 2 lbs shrimp (peeled, deviened)
- 1⁄2 cup dry sherry
Directions
- Heat oven 400.
- Combine the oil, coconut, breadcrumbs, parsley, garlic, salt, paprika and cayenne.
- Reserve 1/4 cup. Toss rest with shrimp to coat.
- Pour sherry in a sprayed 9x13 baking dish.
- Add shrimp.
- Scatter on remaining mix.
- Bake 15 minutes.
