My Greek Salad

Serves: 6-8
Ingredients
- 4 cups cherry tomatoes or 4 cups grape tomatoes, halved
- 1⁄2 English cucumber, diced
- 1⁄2 red onion, sliced paper thin
- 1 cup crumbled feta cheese
- 1 cup kalamata olive
- 1 cup flat leaf parsley, chopped
Dressing
- 1⁄4 cup extra virgin olive oil
- 1 garlic clove, minced
- 1 tablespoon balsamic vinegar
- 1 tablespoon lemon juice
- 1 teaspoon honey
- 1 teaspoon oregano
- salt & pepper
Directions
- Combine Tomatoes, Cucumber, Red onion, Feta Cheese, Kalamata Olives and Parsley.
- Mix dressing ingredients together and pour over salad.
- Let sit in fridge for 1 hour.
