My Friend Marci's Mint Brownies

These are a HUGE hit in our neighborhood, and make a whole cookiesheet full, which is great for potlucks or large groups. They taste heavenly after being stored in the fridge and set at room temp for a few minutes. Show more

  1. Preheat oven to 350 degrees and grease and flour an 11x14 sheet pan.
  2. Blend sugar, butter and cocoa. Add eggs one at a time. Mix flour and salt in a separate bowl, then add to butter mixture. Add vanilla.
  3. Bake for 30 minutes and cool completely. Combine mint frosting ingredients and frost brownies. Combine chocolate frosting and frost over mint frosting.
