My Favorite Taco Salad

I usually use Doritos or tortilla chips, but Fritos corn chips are also good in this salad. You can use any variety of lettuce that you like. Show more

Serves: 4

Yields: 1 large salad bowl

Ingredients

  • 1  lb  93% lean ground beef
  • 1  medium onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2  tomatoes, chopped
  • 1  bunch lettuce, torn into pieces
  • 1 (1 1/4ounce) envelope  taco seasoning (low-sodium)
  • 8  ounces  Mexican blend cheese
  • 1  avocado, chopped
  • 1 (10 -12 ounce) bag tortilla chips, broken into pieces
  • 8  ounces  Catalina dressing (I use Kraft light)

Directions

  1. Heat a large skillet over medium-high heat. Add ground beef and onions and cook, breaking up any lumps of meat until no longer pink.
  2. Add taco seasoning mix and 1/4 cup water. Stir and cook for 1 minute more.
  3. Mix in black beans and cook until beans are heated.
  4. Combine lettuce, tomatoes, avocado and cheese in a large salad bowl.
  5. Add meat mixture to salad bowl and toss ingredients well with salad dressing.
  6. Add in chips, toss and serve immediately.
  7. Serve with additional salad dressing if desired.
