My Favorite Spinach Quiche

- Preheat oven to 375 degrees.
- In a large frying pan, melt butter over medium-high heat. Cook onion, stirring occasionally, until soft, about 3 minutes. Add mushrooms and cook, stirring, until barely tender, 3 to 4 minutes. Add drained spinach and cook until moisture evaporates, 3 to 4 minutes. Set aside.
- In a medium bowl, beat eggs lightly. Mix in milk, thyme, tarragon, salt, pepper, and Gruyere cheese. Add cooked spinach to egg mixture and stir to blend. Pour filling into pie crust.
- Bake 25 to 35 minutes, until quiche is puffy and golden. Serve warm.
