My Favorite Spinach Quiche

  1. Preheat oven to 375 degrees.
  2. In a large frying pan, melt butter over medium-high heat. Cook onion, stirring occasionally, until soft, about 3 minutes. Add mushrooms and cook, stirring, until barely tender, 3 to 4 minutes. Add drained spinach and cook until moisture evaporates, 3 to 4 minutes. Set aside.
  3. In a medium bowl, beat eggs lightly. Mix in milk, thyme, tarragon, salt, pepper, and Gruyere cheese. Add cooked spinach to egg mixture and stir to blend. Pour filling into pie crust.
  4. Bake 25 to 35 minutes, until quiche is puffy and golden. Serve warm.
