My Favorite Pumpkin Dinner Rolls

Yields: 2 dozen

Ingredients

  • 1  cup sugar
  • 12 cup water, warm
  • 2  cups milk, warm
  • 14 cup butter (softened or melted)
  • 2  cups pumpkin (mashed, cooked or 1 can of pumpkin)
  • 2  teaspoons salt
  • 12 cup wheat germ (can omit and use flour instead)
  • 10 -12  cups all-purpose flour (use a mix of white and wheat flour(1/3 whole wheat to 2/3 white)
  • 7  teaspoons dry yeast

Directions

  1. In large mixing bowl, combine sugar, water, milk, butter, pumpkin, and salt. Mix well.
  2. Add wheat germ, 7 to 8 cups of the flour, and yeast.
  3. Mix and then continue adding flour and kneading until dough is elastic and not sticky.
  4. Place dough in greased bowl and grease top of dough.
  5. Cover with a towel and set in a warm place until doubled (about 1 hour).
  6. Punch dough down and divide into thirds.
  7. Divide each third into 16 pieces and shape into balls.
  8. Place on greased baking sheets.
  9. Cover and let rise until almost doubled, about 30 minutes.
  10. Bake at 350 for 15 to 18 minutes, until tops are golden.
  11. Brush with melted butter as soon as they come out of the oven.
  12. These rolls normally look somewhat dry when first coming out of the oven. Wait about 15 minutes and they will look beautiful.
