My Family's Favorite Cauliflower Soup

Serves: 4-6
Ingredients
- 1⁄2 cup butter
- 3⁄4 cup chopped onion
- 1 large cauliflower, cut into smaller pieces
- 3 tablespoons flour
- 3 cups chicken broth (or 1 large can)
- 1 cup whipping cream (small container)
- 1 cup milk, fill container of whipping cream
- 1 cup swiss cheese, grated
- 1⁄4 teaspoon salt and pepper
Directions
- Melt butter in dutch oven. Cook onion and cauliflower. Note: The cauliflower does not have to be completely soft.
- Sprinkle flour over vegetables and cook until slightly brown.
- Add chicken broth and heat to a boil.
- Reduce heat and simmer until vegetables are very tender.
- Cool slightly, and mash vegetables.
- Heat to a boil.
- Reduce heat and slowly add cream and milk.
- Heat to a boil.
- Reduce heat and add cheese.
- Cook over very low heat until cheese melts and add salt and pepper.
