My Family's Favorite Cauliflower Soup

This is a thin but delicious soup. I grew up on it and love it!

Serves: 4-6

Ingredients

  • 12 cup butter
  • 34 cup  chopped onion
  • 1  large cauliflower, cut into smaller pieces
  • 3  tablespoons flour
  • 3  cups chicken broth (or 1 large can)
  • 1  cup  whipping cream (small container)
  • 1  cup milk, fill container of whipping cream
  • 1  cup swiss cheese, grated
  • 14 teaspoon  salt and pepper

Directions

  1. Melt butter in dutch oven. Cook onion and cauliflower. Note: The cauliflower does not have to be completely soft.
  2. Sprinkle flour over vegetables and cook until slightly brown.
  3. Add chicken broth and heat to a boil.
  4. Reduce heat and simmer until vegetables are very tender.
  5. Cool slightly, and mash vegetables.
  6. Heat to a boil.
  7. Reduce heat and slowly add cream and milk.
  8. Heat to a boil.
  9. Reduce heat and add cheese.
  10. Cook over very low heat until cheese melts and add salt and pepper.
