My Christmas Welsh Cakes

I grew up with these as a special treat. Best when warm and lots of butter. Not meant to be healthy just yummie. Show more

  1. Sift together - flour, baking powder, baking soda, salt and sugar.
  2. Work in the butter until mixture is like coarse meal.
  3. Mix in the dried fruit.
  4. Stir in beaten egg and vanilla.
  5. Gather dough into a ball (add a small amount of milk just to make dough workable, if necessary).
  6. Knead approximately 15 times until smooth.
  7. Chill in fridge for 30 - 60 minutes.
  8. Preheat electric frypan without oil or grease to 300 degrees F.
  9. On well floured board goll or pat dough to 1/3 - 1/2 inch thickness.
  10. Cut in 2 inch circles.
  11. "Bake" in frypan on first side 4 - 5 minutes.
  12. Turn and brown on second side approximately 4 minute.
  13. Place on paper towel to cool.
