Must Try Potato Salad

Ingredients
- 2 cups potatoes, cooked warm and cubed small
- 3 tablespoons salad oil
- 1 tablespoon vinegar
- 1 1⁄2 teaspoons salt
- 1⁄8 teaspoon pepper
- 1⁄2 cup ripe olives, pitted and quartered
- 2 eggs, hardcooked and sliced
- 1 cup celery, sliced thin
- 1⁄2 cup dill pickle, diced
- 1⁄4 cup pimiento, diced
- 1 teaspoon onion, grated
- 1 tablespoon prepared mustard
- 1⁄3 cup mayonnaise
Directions
- Blend salad oil, vinegar, salt and pepper. Pour over potatoes and toss lightly; refrigerate.
- To serve, add olives, eggs, celery, pickles, pimiento, onion and mustard (stirred into mayonnaise) to potato mixture.
