Mussels With Lemongrass

This is a simple whipup which i make when mussels are cheap at the supermarkets. Smells great too.

Directions

  1. Wash and scrape the mussels.
  2. Discard any open ones.
  3. Bring the water to a boil in a large saucepan.
  4. Add shallots, garlic, lemongrass and fish sauce.
  5. Let this simmer 30min, bring water to boil, add mussels.
  6. Cover and boil for five minutes over high heat.
  7. Add salt and pepper to taste and sprinkle with basil leaves.
  8. Cover and cook a few minutes more before removing from the heat.
  9. Discard any mussels which have not opened during cooking.
