Mushroom Stroganoff

Ingredients
- 8 ounces mushrooms (sliced)
- 1 tablespoon olive oil
- 1 cup sour cream
- 1⁄4 cup white wine
- 1 vegetable stock cube
- 1 tablespoon tomato paste
- 1 teaspoon oregano
- salt and pepper (to taste)
Directions
- Saute the mushrooms in oil for 5-10 minutes.
- Add the stock cube and wine. Dissolve the stock cube.
- Add the remaining ingredients.
- Simmer for 10-15 minutes.
- Serve with rice.
