Mushroom Salad

Ingredients
- 2 tablespoons lemon juice
- 3 tablespoons olive oil
- 1 garlic clove, minced
- 2 tablespoons minced fresh parsley
- 1 teaspoon chopped fresh oregano
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 lb fresh mushrooms, very thinly sliced
Directions
- In medium bowl, combine all ingredients except mushrooms. Beat with a fork to blend.
- Add mushrooms and toss to coat with dressing.
