Mushroom Rice Bake

Serves: 4-6

Ingredients

  • 1 12 cups  long  grain or 1 12 cups whole grain rice, uncooked
  • 2  cups  sliced mushrooms (about 8 ounces)
  • 1  onion, small, chopped
  • 10 12 ounces  can condensed beef broth
  • 10 12 ounces  cream of mushroom soup, I use Low Sodium
  • 14 cup butter (1/2 stick)
  • 12 teaspoon black pepper

Directions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Coat a 2 quart casserole dish with cooking spray.
  3. Set aside.
  4. In a medium bowl combine all ingredients and mix well.
  5. Spoon mixture into prepared casserole dish.
  6. Cover and bake for 50-55 minutes or until liquid is absorbed and rice is tender.
  7. Garnish with scallion slices.
