Mushroom Muffins

Yields: 14 muffins

Ingredients

  • 1  egg
  • 13 cup  oil or 13 cup  melted shortening
  • 14 cup milk
  • 1 (10 ounce) can  condensed cream of mushroom soup (undiluted)
  • 2  cups  pastry flour
  • 3  teaspoons baking powder
  • 14 teaspoon salt
  • 2  tablespoons parsley (optional) or 2  tablespoons chives, chopped (optional)

Directions

  1. Beat egg, blend in shortening, milk and soup.
  2. Sift flour, baking powder and salt.
  3. Add liquid mixture to dry ingredients along with parsley or chives.
  4. Stir til flour is just moistened.
  5. Fill greased muffin tins 2/3 full.
  6. Bake 20 mins 425F.
