Mushroom Frittata

  1. Preheat broiler.
  2. Heat 8-inch ovenproof skillet over medium-high heat.
  3. Saute mushrooms for 12 minutes until brown.
  4. Remove from pan and put in bowl to cool a bit.
  5. Wipe pan clean.
  6. Add rest of ingredients to mushroom bowl.
  7. Stir well.
  8. Reheat pan over medium heat.
  9. Lightly coat with oil.
  10. Add frittata batter and cook, covered, for 3 minutes or until practically set.
  11. Broil 3 minutes or until set.
  12. Cut into 4 wedges.
