Mushroom Crab Bisque

Another recipe that has been in my files for over 25 years.

Serves: 6

Ingredients

  • 3  tablespoons butter
  • 1  small onion, finely chopped
  • 34 lb mushroom, chopped
  • 3  tablespoons flour
  • 2  cups milk
  • 1  cup  whipping cream
  • 1  tablespoon lemon juice
  • 1  tablespoon parsley, chopped
  • 6  ounces  crabmeat
  •  salt and pepper

Directions

  1. In a large saucepan, melt the butter and saute the onion, mushrooms until tender, about 5 minutes.
  2. Stir in flour and cook, stirring for 1 minute. Whisk in the milk, cream, lemon juice and parsley.
  3. Stir over medium high heat and bring to a simmering point. Stir until thick.
  4. Stir in the crabmeat and any juices. Salt and pepper to taste. Gently simmer for 5 minutes. Serve with chopped parsley as a garnish.
