Mushroom Barley Casserole

very easy casserole good with chicken or beef

Serves: 6

Ingredients

  • 5  cups  sliced mushrooms
  • 1  cup  chopped onion
  • 12 cup butter
  • 1 12 cups pearl barley
  • 1 (4 ounce) can pimentos, coarsley chopped
  • 12 teaspoon salt
  • 2  cups  chicken stock
  • 18 teaspoon pepper

Directions

  1. Set oven to 350 degrees F.
  2. Saute mushrooms and onions in butter until soft.
  3. Add barley, cook until barley is lightly browned.
  4. Add remaining ingredients.
  5. Transfer to a large casserole dish.
  6. Cover and bake 50 to 60 minute until barley is tender and liquid is absorbed.
