Mushroom and Nut Couscous

This couscous recipe has you cook the couscous with the rest of the ingredients instead of making it, fluffing and then mixing with the other ingredients. It makes for a different flavor. You can replace 1/2 cup of the broth with white wine for a different take. Show more

Serves: 2-4

Ingredients

  • 1  cup couscous
  • 2  tablespoons olive oil
  • 12 cup onion, chopped
  • 1  cup mushroom, sliced
  • 14 cup  nuts (pine, sliced almond, pecan or walnut. More if you want)
  • 2  cups chicken broth (mushroom or veggie also work well)
  • 14 cup basil, fresh chopped

Directions

  1. Heat the olive oil in a pan large enough to hold everything.
  2. Gently cook the onion, mushrooms and nuts for 2-3 minutes or til soft.
  3. Add the couscous and broth.
  4. Season to taste as you wish.
  5. Cover and simmer 8-10 minutes, stirring occasionally.
  6. Garnish with chopped basil and enjoy.
