Mushroom and Almond Rice Pilaf

A wonderful side dish to almost any meat entree. This works well with any type of rice - brown or white, long-grain or short-grain. Show more

Ingredients

  • 1  small onion, chopped
  • 1  cup  uncooked rice
  • 14 cup margarine
  • 1  can  sliced mushroom, and liquid
  • 12 cup  roasted almonds
  • 1  can  beef consomme soup
  • 34 cup water
  • 1  teaspoon salt
  • 18 teaspoon pepper

Directions

  1. Brown onions in margarine.
  2. Mix together with remaining ingredients in a shallow baking dish.
  3. Bake for 1 hour at 375 degrees.
