Ingredients
- 1 1⁄4 cups flour
- 1 tablespoon baking powder
- 1⁄2 teaspoon baking soda
- 1 cup mashed banana
- 1⁄4 cup Splenda Sugar Blend for Baking
- 1⁄2 cup Better'n Eggs®
- 1⁄2 teaspoon vanilla extract
- 3 tablespoons peanut butter
- 3 tablespoons mini chocolate chips
- 2⁄3 cup mini marshmallows
Directions
- Preheat oven to 350°F.
- Spray muffin pan or line with cupcake papers.
- Combine flour, baking powder, and baking soda in a medium size bowl.
- Blend banana, splenda, eggs, peanut butter and vanilla in a large bowl.
- Stir flour into banana mixture.
- Stir in chocolate chips and marshmallows.
- Pour into muffin pan.
- Bake for 15-20 minutes.
