Mother's Oat Cake

Yields: 1 9x13 pan
Ingredients
- 1 3⁄4 cups boiling water
- 1 1⁄2 cups oatmeal
- 3⁄4 cup shortening
- 1 1⁄2 cups white sugar
- 1 1⁄2 cups brown sugar
- 1 teaspoon vanilla
- 3 eggs
- 2 cups flour
- 1 1⁄2 teaspoons baking soda
- 3⁄4 teaspoon salt
- 1 1⁄2 teaspoons cinnamon
- 1⁄4 teaspoon nutmeg
Directions
- Mix together Oatmeal and Boiling Water, Let cool 20 minutes.
- In mixing bowl cream Shortening, White Sugar, Brown Sugar, Vanilla and Eggs.
- Add Oatmeal mixture.
- Stir in Flour, Soda, Salt, Cinnamon and Nutmeg.
- Bake at 350 degrees in a greased 9x13 pan for 50 minutes.
- Cool cake and top with Caramel Icing.
