Moroccan Whole Grain Couscous

This is a very easy recipe obtained at a cooking class I attended on low fat, high fiber.

Serves: 6

Ingredients

  • 2 (12 ounce) boxes  whole wheat couscous
  • 12 teaspoon salt
  • 2  tablespoons olive oil
  • 12 cup  baby peas, frozen
  • 12 cup chickpeas, drained
  • 12 cup  chopped dates
  • 12 cup pistachios, meats roughly chopped
  •  white pepper

Directions

  1. Prepare cous cous according to directions.
  2. Fluff cous cous after cooking.
  3. LIghtly cool.
  4. Add all other ingredients except oil and mix well.
  5. Drizzle with olive oil.
