Moroccan Whole Grain Couscous

Ingredients
- 2 (12 ounce) boxes whole wheat couscous
- 1⁄2 teaspoon salt
- 2 tablespoons olive oil
- 1⁄2 cup baby peas, frozen
- 1⁄2 cup chickpeas, drained
- 1⁄2 cup chopped dates
- 1⁄2 cup pistachios, meats roughly chopped
- white pepper
Directions
- Prepare cous cous according to directions.
- Fluff cous cous after cooking.
- LIghtly cool.
- Add all other ingredients except oil and mix well.
- Drizzle with olive oil.
