Morning Glory Muffins Ala Kp

Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 1⁄4 cups Splenda granular
- 1 tablespoon cinnamon
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 2 cups carrots, grated
- 1 apple, peeled and chopped
- 1 cup raisins
- 1⁄2 cup coconut, shredded
- 2 eggs
- 1 cup applesauce
- 1 tablespoon oil
- 1 tablespoon vanilla
Directions
- Preheat oven to 375. Lightly spray with PAM, 18 muffin tins.
- In a medium bowl, whisk together eggs, applesauce, oil and vanilla.
- In a large bowl, stir together flours, sugar, cinnamon, paking powder, baking soda and salt. Stir in carrots, apples, raisons and coconut. Stir in applesauce mixture and combiine just until mixed. Batter will be very thick. Spoon into prepared miffins tins, about 3/4 full.
- Bake at 375 20 - 30 minutes, or until tops are golden.
