Mom's Vegetable Soup
Ready In: 3 hrs
Serves: 6-8
Yields: 6-8 cups of soup
Ingredients
- 6 cups water
- 2 cups tomato juice
- 1⁄3 cup of coasely chopped onion
- 5 beef bouillon cubes
- 2 bay leaves
- 1 cup of diced celery
- 1 cup of sliced carrot
- 1 cup of diced potato
- 2 cups of chopped cabbage
- 1 cup green beans
- salt and pepper
Directions
- Add water, tomato juice, onion, and seasonings to large pot.
- Cover pot with lid and simmer for 1.5 hours.
- Add other vegetables and simmer for another hour.
- Remove bay leaves before serving.
- Salt and pepper to taste.
