Mom's Sunday Pancakes

Yields: 9-12 pancakes
Ingredients
- 2 cups flour (I use unbleached)
- 5 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons sugar
- 2 eggs
- 2 cups milk
- 1⁄3 cup canola oil
- 1 teaspoon vanilla
Directions
- Beat eggs. Add milk.
- Fold wet ingredients into dry ingredients until blended.
- Add oil.
- I always let the batter rest for 20ish minutes to give the baking powder time to react.
