Mom's Spinach Salad

This is my Mom's spinach salad recipe that we grew up with and it's always been a favorite of anyone that's tried it. I believe Mom cut the recipe from the newspaper. Prep time is approximate (I like to tear the stems off the spinach so that takes a few more minutes, your choice), and the cooking time is for the hard boiled eggs. This is very good the next day (spinach kind of wilts in the dressing). I hope you like it as much as we do! Show more

Directions

  1. Combine celery, onion, 3 chopped eggs, cheese & spinach.
  2. Combine salt, pepper, Tabasco, vinegar, horseradish & mayonnaise.
  3. Mix dressing with vegetables.
  4. Put in serving dish, garnish with reserved grated hard boiled egg & sprinkle with paprika.
  5. Chill.
