Mom's Salmon Patties

Ingredients
- 1 (6 ounce) can salmon
- 1 dash salt
- 6 saltine crackers, crumbled
- 2 tablespoons parmesan cheese, grated
- 2 tablespoons lemon juice
- 1 egg
- 1⁄4 cup green onion, diced
- 1⁄4 cup cornmeal
- 3 tablespoons cooking oil
Directions
- Drain water off salmon.
- Mix salmon, salt, crackers, cheese, lemon juice, egg and onions in a small bowl.
- Shape into patties and dredge in cornmeal.
- Over medium-high heat, heat oil in skillet.
- Add patties, cooking on each side for approximately 5 minutes, or until brown.
