Mom's Ratatouille

Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 large eggplant, sliced
- 1 (8 ounce) white button mushrooms, sliced
- 5 -7 squash, sliced
- 1 (22 ounce) can diced tomatoes
- 2 tablespoons sugar
- salt
- fresh ground black pepper
- rice, to serve
Directions
- Add oil, garlic, and onion to large pot. Cook until onion becomes almost translucent.
- Add sliced eggplant, mushrooms, and squash and cook for another 3 minutes.
- Add diced tomatoes, and allow to cook until everything is tender, about 20 minutes.
- Add sugar, salt, and pepper to taste.
- Prepare rice to serve under the Ratatouille, and enjoy!
